Chicken in Spicy Tomato Sauce












Ingredients

o 2 onions , peeled
o 5 cloves garlic, peeled
o 2 candlenuts
o 50g dried chillies, soaked in hot water, seeded and drained
o 5-cm (2-in) knob galangal (lengkuas), peeled
o 5-cm (2-in) knob ginger, peeled
o 1(about 1.5 kg /3 lb 4½ oz) chicken, cut into 12 pieces
o 2 tsp turmeric powderv
o 200 ml (6½ fl oz/¾ cup) cooking oil
o 5-cm (2-in) length cinnamon stick
o 5 cardamom pods
o 2 lemon grass, lightly bruised
o 2 tsbsp tomato paste/ketchup
o 100 ml (3½ fl oz/2/5cup) evaporated
o milk/coconut cream Salt and sugar to taste

Method

Grind or blend onions, garlic, candlenuts, dried chillies, galangal and ginger. Set aside.

Season chicken with turmeric powder and salt for 30 minutes.

Heat oil in a wok. Deep-fry chicken pieces until browned and cooked. remove and drain.

Leave 4 tablespoons of oil in the wok. Sauté cinnamon, cardamom pods and lemon grass. Add ground ingredients and fry until fragrant.

Add fried chicken, tomato paste/ketchup and evaporated milk/coconut cream. Stir well to coat chicken and simmer until gravy thickens slightly. Season to taste with salt and sugar.

Garnish as desired and serve with Special Tomato rice.

TALAM TAKO









Ingredient:
(white part)

50 gm green pea flour
100 gm Castor sugar
1 pc coconut - make into 4 cup of coconut milk
1 t/s bicarbonate soda
some salt

* blend all.

(green part)

100 gm green pea flour
200 gm Castor sugar
5 cup panda n blended water.
1 t/s carbonate soda

* blend all.

preparation:

1. used 2 separate of cooking pot.Put white blended part in pot 1 and green blended part in pot 2.Stir until both ingredient become viscous.(slow flame)

2. Pour green part alternate with white part till finished.(as per step to do marble cake)in cake mold.

3.Put in freezer and ready to cut.

Note: used white type of green pea flour.able to get from cake shoppe.

Don't Rush Through With The Cooking Process

Often food isn't at its very best because it is slightly undercooked. Allow yourself enough time so that everything is browned properly and cooked through. One Thing At A Time

While you may have no choice but to multi-task a bit when preparing an entire meal, try not to get too many complicated things going on at the same time. This is a sure fire way to get food stuck to the pan or dry it out. Paying too much attention to one dish while ignoring another is a definite recipe for disaster. Plan ahead and consider which items will take the longest to cook and which items need the most attention while cooking. This will help you determine what order to prepare each dish so that each gets the time it requires.

Always use a timer! Rarely does an item take exactly the amount of time the recipe says it will, but that is usually at least a good place to start! Try setting your timer 5 or 10 minutes before the recipe says the dish should be done and check it. If it still isn't finished, you will have a good visual way to estimate how much more time is required. If it is done, you just saved yourself from burning it!
